​This easy parmesan truffle fries recipe is perfect to make for game day. A good game day menu can be very important when setting the tone for the day and these delicious fries paired with a delicious sandwich can really make for a wonderful family day. These fries can also be great to make for a family pizza night. Whether this is your first time making homemade fries or your hundredth, this recipe will make it easy to follow for anyone.

Ingredients

  • russet potatoes
  • neutral oil such as peanut oil or canola oil
  • truffle oil
  • parmesan cheese
  • salt

Instructions

Peel the potatoes. Slice the potatoes into thin, long strips, about a half inch thickness and about 2-2 ½ inches long depending on the size of the potato. Soak the potato in water. Spread a paper towel on the counter and spread the potatoes out in a single layer on the paper towels. Dry the potatoes completely.

Heat the oil up to about 350 degrees in a cast iron skillet on the stove or in the deep fryer. Add half of the french fries. Fry for about 5 minutes and remove. Repeat for the other half. Bring the heat of the oil up to about 400 degrees. Fry the fries again for about 3-4 minutes or until golden brown. Remove from the oil.

Add the french fries to a medium size bowl. Toss a little salt in with the fries.

Drizzle the truffle oil over the fries and toss. Grate fresh parmesan cheese over the fries and toss. Serve with additional parmesan cheese grated on top.

Hint: do not skip the step of soaking the fries in cold water prior to frying. This removes some of the starch from the potatoes which allows for an extra crispy french fries.

Substitutions

  • Fries - use frozen french fries and either bake, air fry or fry them if you want to free up time
  • Truffle Oil - use either black truffle oil or white truffle oil
  • Dairy Free - remove the parmesan cheese and serve only tossed with truffle oil

Variations

  • Spicy - toss in chili pepper flakes in addition to truffle oil and parmesan cheese to imbue heat in this dish
  • Garlic Parmesan - replace truffle oil with olive oil mixed with garlic clove for a garlic parmesan variation. Add some truffle oil along with it for garlic truffle fries
  • Kid friendly - toss with salt and pepper for a more simple and kid friendly version

Equipment

For this recipe, something will be needed in order to fry the french fries. There are a few options for this. A cast iron skillet filled with hot oil or an electric deep fryer can be used for deep frying. A sharp knife will be needed to hand cut the fries or a fry cutter can be used. If deep frying is not an option, air frying is also a choice.

Two medium sized bowls or a large bowl will also be needed. One is needed to soak the potatoes prior to frying and one is needed to toss the french fries in with the truffle oil and parmesan cheese.

Storage

Store ingredients in an airtight container. Good for 2-3 days. The fries will lose some crisp the longer it is stored. To regain some crisp, reheat the fries in the air fryer or bake them in the oven. Do not microwave, they will become soggy.

These ingredients don't stand up well to freezing.

Top tip

Do not skip the step of double frying. Double frying is the most effective way to get the crispiest fry possible when making them from scratch. Allowing the fries to settle after the first fry helps them gain an extra crisp. This is my favorite method to use when making french fries because they guarantee crispier fries every time.

FAQ

Does this recipe include real truffles?

Yes and no. This truffle oil is infused with truffle. It provides a very strong truffle flavor so only a little truffle oil is needed. You can also shave real truffle on the fries if you prefer but this is not necessary. The oil is infused with real truffles though. The oil that is used in this recipe is infused with black truffles. Regardless, the truffle oil provides amazing flavor for these homemade french fries.

What are truffles?

Truffles are actually a type of fungi. They are considered a very high end ingredient and can be very expensive. Luckily, truffle oil does not completely break the bank and a little goes a long way with a recipe like this. It has a very intense flavor so definitely do not use too much.

How are the fries removed from the oil?

A slotted spoon or a spider strainer can be used.
