Quick ways to use up spare egg yolks
- Whisk with a little water to make a glaze for pies or breads They will give a lovely rich golden colour to the crust.
- Add to short crust pastry (reduce the water slightly) for a rich pastry crust.
- Beat with a little milk before mixing into mashed potatoes
- Add to whole eggs to enrich scrambled eggs or an omlette.
- Make homemade mayonnaise
- Add to mince when making meatballs, the egg helps bind the meat together and the meatballs to hold their shape.
- Use a couple of yolks in place of a whole egg in a carbonara for a richer sauce.
- Add to bechamel for a richer flavour.
