This is definitely not a traditional German recipe, but it made our "German taste buds" sit up and take notice!

These are absolutely delicious served with almost any meal. In fact, they'd make a nice lunch with a salad on the side.

They are best served right from the oven.

We made enough for our party of six, but you can adjust the recipe accordingly.

Here's the first time Lydia made these. This photo was taken several minutes after they came out of the oven. Even though they collapsed, they tasted great!

Yogurt is your best substitute for sour cream. Whether you're baking or making a dip or sauce, yogurt is a 1:1 sub. If you're in a rush, microwaving them is fine too, though parts of the potato might turn a little tough due to uneven heating.

Why is my baked potato taking forever? ›

The potato may be too big: If the potato is too large, it will take longer to bake all the way through. It's best to choose potatoes that are similar in size, around 6-8 ounces each. The oven temperature may be too low: If the oven temperature is too low, the potato will take longer to cook.
