"I wanted to make stew, but I didn't want to make a lot so this recipe came out of the darkest corners of my brain. And by the way, this recipe is just enough for two hearty bowlfuls. If you want to double this, go right ahead. Please feel free to adjust the seasonings to your own taste. Submitted to "ZAAR" on December 30th, 2008."

  1. Should I add celery? I noticed it didn't list that. Will that change it or do they not cook correctly? I don't want to ruin it over adding it.

  3. Should this cook on HIGH for 6 hours instead of LOW? After cooking on low for 6 hours, it still wasn't done and I had to switch to high for 2 more hours. After that, it turned out great.

  1. A really easy and hearty stew that has just the perfect amount of seasonings. I did use closer to 2lbs. of meat and so adjusted the rest of the ingredients accordingly. This got me 4 good servings. Great comfort food Chef!~Made for Soups On in the Diabetic Forum~

  2. Perfect. Cooked in crock pot 5.5 hours on low, whole petite potatoes, baby carrots, 2 sliced stalks of celery, no bay leaf. The liquid worried me, but it thickened. Best part was there was so little work to do. Happy i found this recipe.

  3. What a fantastic recipe & an "smaller" portion way to serve the hubby beef stew w/o a ton of leftovers! I DID cut this in half after reading reviews--hubby did eat a big portion but there was a small "side portion" leftover. I ended using 1 1/4 cups of broth & 1/4 cup of water, though--b/c I needed to make sure the veggies & meat were covered well--and I cut down on the veggies. used 1/4 cup carrots & about 1 cup potatoes. I added 1 more tbsp of flour at the end, and whisked it up to thicken a bit more. Mine cooked in about 5 1/2 hours & I enjoyed the ease of the crockpot. Thanks for sharing!!

  4. This was delicious!! I wanted an easy stew to make and this fit the bill. Unfortunately, I had to leave out the taters and carrots per our new diet. The meat was very tender and tasty. Will make this one again!

  5. I just realized I haven't reviewed this yet!I made this last week and when I got home from work, supper was ready...and was it ever tasty!I used a beef roast and cut it up into small pieces,it was amazingly tender.I did not have beef broth so I used onion soup mix/soup base instead and it worked great.I thought it might be too onion-y but not at all. This made enough for 4 people so I froze the rest for another meal. This is a great basic beef stew, just what I wanted. Thanks!

  1. This was delicious and easy. I subbed half the beef broth with red wine and followed the rest to a T. As someone else suggested, I think I will throw in some frozen peas next time I make this. It seems not all crockpots are created equal, mine was done in 5 hours on low.

  2. This stew is excellent, shapeweaver! I added an extra pound of stew meat and used quartered onions instead of onion powder and adjusted the flour appropriately. The meat is tender and there is no need to thicken the gravy as it is perfect right out of the crockpot! Thanks for the delicious stew, shapeweaver!

  3. I had a pared down version. No flour - but was thick enough. Just salt & pepper but added celery.

First, gather your main ingredients, starting with the meat: you want about a half pound of meat—beef, lamb, pork, and veal all work—per person you're serving. (You could get by with 6 ounces of meat per person, but a half pound ensures you'll have leftovers, and leftover stew is a very good thing.)

Tips for making the best beef stew

Browning the beef in a skillet beforehand will bring out even more flavor. Cook it on low. While many slow cooker recipes can be made on high for 3-4 hours, I highly recommend cooking this beef stew on low for the full 7-8 hours. This will ensure that the beef gets nice and tender.

1. Browning Is Better. Slow cooker recipes don't always instruct you to brown meat before adding it to the pot, but there are some advantages to doing so. If you sear meat to a crusty brown with a little oil in a hot skillet, the meat develops more complex flavors and improves the dish.

Should I flour stew meat before browning? ›

Tossing the raw meat in a starch, like flour, will increase the rate of browning, but browned flour just doesn't taste as good as browned beef. Eventually, that liquid will evaporate again, and your meat will start browning, but the problem is that the entire time the liquid is steaming, your meat continues to cook.

When to add potatoes to a slow cooker? ›
