We love making frittatas at my house! I like to call them kitchen sink frittatas because they end up stuffed with so many things. Such a great way to clear the crisper out when you have odds and end to use up, but repurposing them in a tasty brunch dish like this.

FAQs

What is the best pan for frittata? ›

Use a cast-iron skillet.

I like to use an enameled cast iron skillet, which does not require any pre-seasoning. If you don't have a skillet, go make this breakfast casserole recipe instead.

How does the frittata get its fluffy texture? ›

Tips for Fluffy Eggs
  1. Using the immersion blender creates air in the eggs which will produce a light and fluffy result.
  2. Heavy cream gives a creamy texture. You can add up to 1/2 cup per dozen eggs.
  3. Don't overcook! Overcooking eggs makes them rubbery.

How do you keep frittata moist? ›

Adding a bit of dairy, whether it's cream or thick yogurt, is essential for getting the moisture and creaminess of the frittata just right. For every dozen eggs, use a half cup of dairy.

How many days will frittata keep? ›

When you refrigerate cooked eggs, they'll stay good to eat for three to four days, so you can easily make a frittata (or two) during Sunday meal prep, slice and pack it up, and enjoy it for breakfast, lunch, or dinner almost all week long. In fact, frittatas are so foolproof, you don't even need a recipe to make one.

How do I stop my frittata from burning on the bottom? ›

The solution is to partially cook the frittata on the stove. To prevent the bottom from burning on the stovetop, give the frittata a few stirs until you can see some large curds of egg and it starts to turn opaque, but it's still wet enough to flatten off the top.

How do you keep frittata from burning on the bottom? ›

I keep a lower heat to try to keep the bottom from burning. I strongly suggest using a nonstick or well-seasoned cast iron pan (I LOVE this pan - crisps, frittatas, casseroles, the best)…or the whole thing can be baked in a well greased, oven-proof dish.

What kind of cheese is best for frittata? ›

Go for high moisture cheeses

According to Cheese Science, high moisture cheeses like mozzarella and smoked Gouda are great melting cheeses that give frittatas their desired texture. Meanwhile, a low moisture cheese like Parmesan won't melt in the oven, especially when it's surrounded by a mixture of eggs.

Does frittata need cream? ›

I've had great results with heavy cream, half-and-half and whole milk. Sour cream, crème fraîche and yogurt will work as well. However, two percent and skim milk are too watery. Omitting the dairy altogether results in a frittata that is, unsurprisingly, more eggy in flavor and less creamy.

Why did my frittata turn GREY? ›

The green-gray color (and the whiff of sulfur smell that often accompanies it) comes from the reaction of iron in the egg yolk and sulfur in the egg white. When heated, the two can combine to make green-gray ferrous sulfide and hydrogen sulfide gas.

How do I know when my frittata is done? ›

The eggs should be cooked through, not runny and a knife should come out clean when inserted into the centre. You can also give the skillet a gentle shake to determine if it is done; a runny frittata will jiggle when you shake the skillet.

When building a frittata What is a good ratio of filling to eggs? ›

The answer is a ratio. For every six eggs, use 1/4 cup heavy cream, 1 cup cheese, and 2 cups total of vegetables and/or meat. This will get you a frittata with a hearty filling — especially if you're using something like potatoes and bacon — and a creamy egg custard shot through with the tang of cheese.

How do you fix a bland frittata? ›

At their worst, they're flat, rubbery, and bland. Instead of risking the latter scenario (and disappointing my hungry roommates), I discovered the ingredient that makes every frittata foolproof. It's yogurt, and it adds just enough richness and moisture to make the best frittata you'll ever eat.

What goes well with frittata? ›

Classic sides for a frittata include a fresh green salad, fruit salad, crispy potatoes and/or some fresh bread, scones or toast. Bacon, ham or sausage are also popular side dishes.

When making a frittata which ingredient should be pre cooked prior to adding it to the egg mixture? ›

This also holds true for aromatics, like onions, and sturdy veggies, like raw potatoes. "They won't get much more tender once you add the beaten eggs," says Perry, "So cook them fully before combining everything." Don't be afraid of getting a little color on the vegetables: That's what makes them so delicious!

Can I eat week old frittata? ›

A cooked frittata will stay good in the fridge for up to four days. Make sure to place the eggs in an airtight container to ensure they stay fresh. And if you plan to freeze your cooked frittata, it will stay good in the freezer for up to three months.

Can you make a frittata in a stainless steel pan? ›

Heavy, stainless steel works because it distributes heat well, but you may need extra oil or clarified butter to prevent the eggs from sticking. Thin pans will burn the eggs using frittata's combination of heat levels. Whichever sort of pan you use, a 12-egg frittata necessitates a large 10- to 12-inch pan.

Can you use a nonstick pan for a frittata? ›

Although this may seem like common sense, you absolutely must use an oven-safe pan to cook frittatas. Your non-stick skillet that's not oven-safe might be the best tool for omelets, but not so with frittatas. The ideal cooking vessel, unsurprisingly, is a well-seasoned cast-iron skillet.

What is the difference between a frittata pan and an omelette pan? ›

Frittatas are cooked in a cast iron pan or oven-safe skillet because they are started on the stovetop and then finished in the oven. And, unlike omelets, frittata fillings are mixed in with the eggs in the pan rather than folded in the center.
