This coleslaw recipe only takes a few minutes to make and is packed with bright and delicious flavor! Super creamy, crunchy, and fresh coleslaw you can make in a cinch!

Ingredients you need for the Apple Bacon Coleslaw

1 medium cabbage, cored and shredded1 small fennel bulb, shredded1 bunch scallions, thinly sliced3 firm apples, peeled, cored, shredded or finely sliced1/2 pack of crispy cooked bacon, broken up into small bits1/2 cup almonds, chopped1/4 cup apple cider vinegar1/2 cup mayonnaise1/2 cup Greek yogurt1/3 cup honey (omit if on Keto or low carb)Salt and fresh cracked black pepperJuice of 1/2 fresh lemon

Directions

1.To make the coleslaw: In a mixing bowl or mason jar, whisk together mayonnaise, Greek yogurt, honey (if using), lemon juice, and apple cider vinegar until smooth. Season with salt and pepper to taste. Keep in mind that bacon will add a savory touch to the coleslaw.

2. In a large salad bowl toss together cabbage, fennel, apples, green onions, and chopped almonds. Pour the dressing over and toss to evenly coat. Serve the apple baconcoleslaw immediately or chill in the refrigerator. Enjoy!
